How to make low-fat rainbow cake.
I made this cake for my Mum’s birthday and she loved it. It doesn’t contain eggs so is good to make for vegetarians (and lax vegans who are okay with milk).

YOU’LL NEED:
1 box of Betty Crocker white cake mix - this is hard to find in UK supermarkets so you can substitute 2-3 bags of generic store-brand sponge cake mix or buy it online here. I tend to stock up whenever I am in the States at a Pay For Less as you can buy it for 99c a box.
1 can of Sprite Zero - you can use normal Sprite, but it will add on more calories to the cake. You can also use any other clear soft drink (7-Up, cream soda), it doesn’t have to be Sprite.
1 set of paste food colours - I recommend these. Paste colours are better as you only need a tiny amount and they don’t compromise the taste/texture of the cake, but you can use normal food colourings.
INSTRUCTIONS
- Preheat the oven according to the temperature on the back of the cake mix box, usually around 180ºc
- Mix together the cake mix and Sprite in a large bowl with a wooden spoon until it is well-combined. Try not to over-mix, a few lumps are normal.
- Divide the mixture into 6 or 7 bowls evenly. I usually do it by putting a spoonful in each bowl until the mix runs out, but you can measure it all out on scales to be more accurate.
- Using a toothpick, add a little of each paste colour to each bowl until you get the colour you desire. The colours of the rainbow are; red, yellow, pink, green, orange, purple, blue. Of course you don’t have to follow these colours, you can use any colour combination. I’ve made this particular cake with pastel colours.
- Grease two 8” shallow cake pans and drop half of each bowl of mix into each pan in concentric circles, dropping each new colour into the middle of the last like the picture below.
- Bake in the oven as per box instructions, or until a toothpick inserted into the cake comes out clean.

For the low-fat icing: I used one packet of sugar free dream topping mixed with milk, then added one packet of sugar free Angel Delight to the mixture and whipped until it made a thick icing-like texture.
